Fig burrata salad

Simple and light, this beautiful refreshing salad is bursting with deliciousness, perfect for entertaining.

PREP 10 MINS SERVES 4-6

INGREDIENTS
8 fresh figs
4 ripe peaches
½ punnet cherry red tomatoes
1 whole burrata
1 passion fruit
Fresh basil leaves
Sea salt & freshly ground black pepper
2 – 3 tablespoons extra-virgin olive oil


METHOD
Wash the figs and peaches under cool water and gently pat dry with a paper towel. Trim off the stem of each fig and cut it into halves or four even pieces
Cut each peach in half and take out the stone. Slice into segments.
Cut the tomatoes in half.
Place fruit onto a serving plate, and place burrata in the middle.
Scoop out passion fruit and sprinkle over the plate.
Place basil leaves evenly over the plate.
Add flaky sea salt and freshly ground black pepper and drizzle oil evenly over the plate.

Serve as is or as an accompaniment.
