Outback

The outback is quintessentially the vast heartland of Australia. It includes places of exquisite beauty and wildness. It is an area of extremes, alternately lush and bountiful, harsh and inhospitable. The traditional ‘smoko’ is where rural workers of all kinds, including cattle or sheep farmers’ would have a mid-morning break that is enjoyed between breakfast and lunch. Traditional Indigenous foods such as “bush tucker” include native foods such as kangaroo, emu, and crocodile. An array of plant foods including fruits like quandong and finger limes, spices like lemon myrtle, and vegetables include warrigal greens and various native yams.
