Happy pancake day!

This is my mum’s basic pancake mix recipe.

As a child, without fail on Pancake Day, my mum would make them for afternoon tea after school. She liked to make them quite thin like crepés. She never added sugar to the mixture, but instead served them with a sprinkling of sugar and lemon juice. Check out her basic pancake recipe.

PREP 5 MINS COOK 15 MINS SERVES AROUND 8

INGREDIENTS
1½ cups milk
1 egg
2 cups self-raising flour
butter

METHOD
Whisk milk and egg together in a jug. Sift flour into a bowl. Make a well in the centre. Add milk mixture. Whisk until just combined.

Heat a large non-stick frying pan over medium heat. Brush pan with butter. Pour the pancake mix into the centre of the pan (no more than 10cm diameter). Swirl the pan around so the mixture spreads evenly. Once lots of bubbles appear on the surface, flip the pancake over and cook for around a minute, until cooked through. Transfer to a plate. Cover loosely with foil to keep warm. Repeat with the remaining mixture.
