INGREDIENTS
Olive oil spray
2 sweet potatoes
1 large ripe avocado
juice of 1 lime, plus 2 wedges
Chilli flakes
2 tomatoes, finely chopped
⅓ small pack of coriander leaves roughly chopped
1 small red onion, finely chopped
METHOD
Heat oven to 220°C. Spray sweet potatoes with oil and place in the oven for 45 minutes or until tender all the way through when pierced with a knife.
Meanwhile, mash avocado with the lime juice in a small bowl, add chilli flakes, tomatoes, coriander and onion. Season with salt and pepper.
Cut the potatoes in half and top with the kidney beans and guacamole. Serve with the lime wedges for squeezing over.
