Tomato relish

A superb homemade relish to use as an accompaniment with cold meat and salad, savoury scones or on sandwiches. Best made from homegrown tomatoes to really bring out the tomato flavour, but our recipe used tinned tomatoes. Great as a gift to give to family and friends.

PREP 5 MINS COOK 1-2 HOURS MAKES 1 JAR

INGREDIENTS
800g tinned tomatoes, crushed
2 heaped teaspoons of cinnamon
¼ sultanas
⅛ cup white vinegar
¼ cup brown sugar
1 tablespoon sweet chilli sauce


METHOD
Place all ingredients in a saucepan.
Simmer on very low heat, stirring frequently for at least one hour or until sultanas have ballooned.
Add the relish to a jar with a lid.
Cool and refrigerate.

SERVING SUGGESTION
Serve with zucchini and cheese scones
